Who else is coming out of this quarantine a professional baker? While the days all melt into one another, we have much more time on our hands. The best part about that is, we can experiment in the kitchen! These Peanut Butter Chocolate Energy Balls are my first attempt at making energy balls. They are naturally sweetened, packed with protein, and absolutely delicious!
I get it though, sometimes you just want a quick dessert without all that effort! And while I’d love to just eat cookie dough every day, apparently it isn’t all that healthy. So with only 8 natural ingredients, I whipped these up and boy, are they awesome!
Ingredients for Peanut Butter Chocolate Energy Balls?
My favorite thing about this recipe is how simple they are to make! All you need is are a few basic pantry staples, a food processor and the willingness to get your hands dirty 🙂
- Dates
- Old Fashion Oats
- Almond Flour
- Peanut Butter
- Coconut Oil
- Maple Syrup
- Cocoa Powder
- Sea Salt
How to make peanut butter chocolate energy balls?
First, you’ll need to soak your dates in hot water for ten minutes to soften them.
Next, in a food processor blend together peanut butter, almond flour, oats, water, and dates until a sticky dough forms.
Then, rolls the dough into balls, place the balls on a cookie sheet and pop them in the freezer for 30 minutes.
After 25 minutes begin to make your chocolate coating. First, add in the coconut oil and allow it to melt completely. Next, mix in the cocoa powder and stir until it is incorporated. The last step is to remove from heat and add in maple syrup.
The maple syrup will thicken the sauce until you have a silky smooth texture. Finally, remove the balls from the freezer and roll them in the chocolate sauce, refreeze for an additional 15 minutes.
In all honesty, you could leave these balls without the chocolate coating! But, this simple chocolate coating compliments the nutty flavor perfectly.
What kind of peanut butter is the best?
Personally, I would recommend using organic creamy peanut butter from Trader Joes. It makes the dough smooth just like cookie dough! However, feel free to swap out your favorite nut butter instead.
I love making a batch of these ahead of time so they are ready to go when that sweet tooth hits. Actually, there is a batch of these hanging out in my freezer right now!
How to store energy balls:
Keep these in an airtight container in the fridge for 10 days! Keeping them cool will make them last longer and keep the chocolate from melting. Or store them in your freezer for months (if they last that long). Just make sure to take them out and let them defrost a few minutes for devouring the best texture.

Place the energy balls back in the freezer for 10-15 minutes until the chocolate hardens.
