Fresh juicy peaches are the epitome of summer! So naturally, I’m kicking off the summer peach recipes with this healthy skillet peach crisp. This crisp is made with natural sugar, gluten-free, and easy to make too! Simply toss sliced peaches in a cinnamon chai, sprinkle with an oat crumble and bake in a cast-iron skillet for the perfect caramelized peach crisp.
This on seriously one of the simplest vegan recipes, with all the warm spices of a pie without all the effort of rolling out the dough. No, fussing with the pie pan just sweet warm peaches topped with a crunchy walnut and oat crumble.
Why bake the peach crisp in a cast-iron skillet?
That’s a fantastic question! The cast-iron holds heat better than a traditional pan so the peaches get an extra caramelization. Plus, I used mini skillets for this recipe because everyone gets their own! Trust me when I tell you, once you have one bit you won’t want to share. If you don’t have mini cast-iron skillets you can use a full-sized cast-iron skillet and just increase your baking time by 10 minutes or alternatively, you can use any pan you have!
Is this vegan peach crisp really healthy?
Well, I’d say yes! For starters, it’s full of fresh fruit! Since it’s vegan, I used coconut oil instead of butter, and it’s made with only a little natural sugar. Oh and not to mention it’s gluten-free! In fact, you could leave out the sugar if you’d prefer since peaches are so sweet on their own. The chai concentrate from One Stripe Chai Co. is unsweetened too but feel free to use any chai you’d like.
How to make a healthy skillet peach crisp
First, wash your fruit well. I like to let it sit in a bowl of luke-warm water for about 10 minutes and then give it a second wash. Next, slice your peaches into medium pieces. You want them to be thick enough to hold together against the heat but not too thick that they take forever to cook. About a 1/2 inch will be good.
Then you simply mix your chai concentrate with the peaches, add in a little bit of cornstarch and vanilla bean paste if you’d like and the filling is ready!
To make the crumble, blend walnuts until they are the size of small pebbles. Next add the ground walnuts to the oats, a dash of cinnamon, a couple of tablespoons of brown sugar, melted coconut oil, and just a pinch of salt. Your crumb topping is ready and now it’s time to assemble your crisps!
Whether you are filling small cast iron skillets or one large one, pour the peach filling in and then top with a generous layer of oat crumble topping. All that’s left is baking and this healthy skillet peach crisp is ready to enjoy!
The best way to eat an easy peach crisp
This easy peach crisp is best served warm, straight out of the oven! In our house, we love plopping a big ol’ scoop of ice cream or coco whip on top too. There is just something so perfect about biting into warm sweet peaches swirled with cool and creamy ice cream. Excuse me while I drool a bit.

Ingredients
Filling:
- 4 peaches
- 1 apple
- 3 tbsp. chai concentrate unsweetened
- 1/2 tsp. vanilla bean paste
- 1 1/4 Tbsp. cornstarch
Crumble:
- 1/2 cup walnuts finely chopped
- 3/4 cup oats
- 3 Tbsp. coconut sugar
- 3 Tbsp. coconut oil
- 1/2 tsp. cinnamon
- pinch of salt
Instructions
- Preheat the oven 350 degrees
- Slice the peaches and apple into 1/2″ pieces.
- Combine chai, vanilla bean paste, cornstarch, and peaches into a bowl and toss until evenly coated.
- Chop or blend walnuts until finely ground.
- Combine oats, coconut oil, chopped walnuts, cinnamon, coconut sugar, and pinch of salt in a separate bowl and mix together.
- Pour peach filling into 2 6″ cast-iron skillets and top with oat crumble.
- Bake for 35 minutes until golden brown.
Notes
You may sub coconut oil for vegan butter if you prefer!
