Description

Gooey and chewy vegan pb&j bars layered with thick nutty peanut butter and sweet chia jam. These bars are a healthy no-bake recipe your inner child will love!


Ingredients

Cookie Base:

  • 2 cups almond flour
  • 2 Tbsp. coconut oil
  • 1/4 cup maple
  • 1/4 tsp. salt
  • 1 tsp. vanilla

Peanut Butter and Jelly Filling:

Topping Crumble:

  • 3 Tbsp. almond flour
  • 1 Tbsp. coconut oil
  • 1 Tbsp. coconut sugar
  • 3 Tbsp. gluten-free old fashion oats
  • 1/2 cup raw almonds
  • 10 dates, pitted
  • 1 tsp. cinnamon

Peanut Butter Drizzle:

  • 1 Tbsp. peanut butter
  • 1 Tbsp. maple
  • 3 Tbsp. water

Instructions

Build the cookie base:

  1. Line an 8×8 pan with parchment paper
  2. Melt coconut oil and combine ingredients for the cookie base in a medium bowl and stir until a tacky dough forms.
  3. Press the cookie dough base into the pan using your hands and level out evenly.

Filling:

  1. Spread the peanut butter evenly over the cookie base.
  2. Pop into the freezer for 10 minutes while you make the crumble topping and peanut butter drizzle.

Crumble Topping:

  1. Melt coconut oil and combine almond flour, coconut sugar, cinnamon, and oats in a small bowl.
  2. Using a food processor or blender, blend dates and almonds until a tacky nut mixture is formed.
  3. Combine the date mixture with the almond flour mixture and mix it with your hands.
  4. Make the peanut butter drizzle next

Peanut Butter Drizzle:

  1. Stir peanut butter, maple, and water together to make a liquid.

Layering:

  1. Take the pan out of the freezer and add an even layer of jam over the semi-solid peanut butter and cookie base.
  2. Crumble the topping over the top and lightly press it down.
  3. Drizzle the peanut butter mixture over the top.
  4. Place the bars in the freezer for 2 hours or until solid.
  5. Remove the bars from the freezer and from the pan.
  6. Slice and enjoy!

Notes

  • You can use any nut butter you like in place of peanut butter.
  • Make it grain free by omitting the oats and replacing it with more almond flour or shredded coconut.
