Description

Crunchy clusters of walnuts, dates, and poppyseed, drizzled with sweet maple lemon syrup, this Lemon Poppyseed Granola will brighten your morning!


Ingredients

Scale
  •  2 cups gluten-free oats
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 2 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1 Tbsp. poppyseeds
  • 2 Tbsp. dates, chopped
  • 2 Tbsp. raisins 
  • 1/4 cup almonds, chopped
  • 1/4 cup coconut flakes

Instructions

  • Preheat the oven to 325 degrees
  • Melt coconut oil and add maple syrup, lemon, and vanilla.
  • Chop dates and almonds.
  • Coat oats, raisins, dates, and coconut flakes, with coconut oil maple mix.
  • Spread oats on a baking sheet and sprinkle with poppy seeds and salt.
  • Bake for 30-40 minutes until golden brown.
  • Allow to cool, crumble, and enjoy! 

Notes

Use old fashion gluten-free oats for the best texture!
