Description

Zesty citrus adds a burst of flavor to your morning routine. This orange poppyseed baked oatmeal tastes like a slice of cake aka heaven.


Ingredients

Scale
  • 2 1/2 cup gluten-free oatmeal
  • 2 tbsp. poppyseeds
  • 1 tsp. vanilla
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 cup water
  • 1 2/3 cup orange juice
  • 1 Tbsp. orange zest (optional)
  • 1 cup maple syrup
  • 1/2 cup shredded coconut for topping

Instructions

  1. Preheat the oven to 350 degrees.
  2. Zest and orange if desired.
  3. Combine all the ingredients, except shredded coconut, into a bowl and mix well.
  4. Line an 8×8 pan with parchment paper or lightly coated with coconut oil.
  5. Transfer batter to the pan and sprinkle with the top with shredded coconut.
  6. Bake for 25-30 minutes!
  7. Slice and enjoy.
