- 2 1/2 cup gluten-free oatmeal
- 2 tbsp. poppyseeds
- 1 tsp. vanilla
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 cup water
- 1 2/3 cup orange juice
- 1 Tbsp. orange zest (optional)
- 1 cup maple syrup
- 1/2 cup shredded coconut for topping
Instructions
- Preheat the oven to 350 degrees.
- Zest and orange if desired.
- Combine all the ingredients, except shredded coconut, into a bowl and mix well.
- Line an 8×8 pan with parchment paper or lightly coated with coconut oil.
- Transfer batter to the pan and sprinkle with the top with shredded coconut.
- Bake for 25-30 minutes!
- Slice and enjoy.
